Healthy Breakfast Quiche
Ingredients for the crust
1 1/2 CUPS BLANCHED
ALMOND FLOUR
1/3 CUP COCONUT FLOUR
1 LARGE EGG, WHISKED
1 STICK BUTTER, MELTED
1/2 TSP SALT
Ingredients for the filling
6 SLICES THiCK CUT BACON
1 MEDIUM ONION, CHOPPED
8 OZ SPINACH
(FRESH OR FROZEN)
1/2 CUP HEAVY CREAM
4 LARGE EGGS
1 CUP CHEDDAR CHEESE, SHREDDED
1/3 TSP SALT
1/6 TSP BLACK PEPPER
Steps
1. Preheat oven to 400°F.
2. In a large bowl, mix together almond flour, coconut flour, and salt. Add egg and melted butter and mix well. then form the dough into a ball and let sit for 5 minutes.
3. Press dough into a 9-inch pie dish. Line the dough with parchment paper and smooth out the crust, then remove the paper. Prebake crust for about 10-15 minutes or until lightly golden.
4. While the crust is baking, fry bacon in a skillet over medium heat until the bottom is browned and the edges begin to curl about 4-5 minutes. Turn bacon over and cook for an additional 2-5 minutes.

Pour the egg mixture into the pie crust. Reduce oven heat to 375°F. then bake for 40-45 minutes until top is golden brown and the center is set.
Remove from oven and let rest for 5 minutes. Slice into 8 slices and serve warm
Notes: For a crustless quiche, skip steps 1-3 and use an 8-inch pie pan instead of a 9-inch pie pan,
